Crock Pot Chicken N Dumplings – Freezer Meal

Continuing to share some of my favorite slow cooker meals for the freezer. Read more about freezer slow cooking here.

Crock Pot Chicken N Dumplings

001Ingredients

1-2 pounds of boneless chicken

1 small onion, chopped

frozen vegetables, 16 ounces – I use mixed veggies…chopped carrots, peas, and corn.

2 cans cream of chicken soup

1 can of refrigerated biscuits, cut each biscuit into fourths.

Instructions

Place chicken in a gallon size freezer bag. Then mix in all remaining ingredients, except the biscuits. Place in the freezer until the night before you are ready to serve.

Thaw in the refrigerator on the day you will serve. If you forgot to thaw it, no worries just cook it a little longer. You will know if the chicken is done when you stir and the chicken shreds. Place your chicken mixture in the crock pot, cover and cook on low for 6-8 hours. 1 hour before dinner time, stir the mixture, this will shred the chicken. Then add the biscuits on the top of the mixture. Cook for an additional hour.

That’s it…dinner is served!

This meal gets 3/5 stars from my family, The oldest and youngest boy and I really like it(especially the “dumplings”), the hubs thinks its ok, but the picky eater is not a fan at all, but he did eat it!
