This is an easy and very inexpensive meal that is flexible to please every member of your family.
2 pounds of cooked ground meat(beef, turkey, whatever you prefer)
1 can of chili beans
1 can of Rotel Original
Flour Tortillas – taco size
Toppings ideas – cheese, lettuce, tomatoes, onions, jalapeno, sour cream.
Mix cooked ground meat, chili beans, and Rotel in a freezer bag.
When ready to eat, thaw in refrigerator the night before. You can skip this step if you like, it will just take a little longer to heat. Empty the contents of the bag into your slow cooker and cook on low for 4-6 hours, until heated through.
When you are ready to serve, make your tortillas. Heat a little oil in a frying pan on medium. Cook each tortilla until crispy, they may bubble up a bit, just poke a hole in the bubble and keep going. Lightly brown both sides of the tortilla. Place tortilla on a plate, add your meat mixture from the crock pot, then add your toppings just like a pizza. I like to cut them into slices as it makes them easier to handle.
You could also serve this taco style in a soft or hard shell, on top of chips for a yummy pile of nachos, or on a bed of lettuce for a taco-style salad.
If your family likes Mexican food like mine, I recommend making several batches of this mixture at one time and freeze in separate freezer bags.
This meal gets 4/5 stars from my family, only because my youngest thinks it is a bit too spicy. You could always replace the Rotel with diced tomatoes to take some of the spice away.
